Pot de Creme

Ingredients

  • 1 cup plus 2 tbsp dark chocolate, chopped

  • 1 cup whipping cream

  • 3 tbsp Kahlua

  • 1/4 cup brewed espresso

  • 2 egg yolks

  • 3 tbsp butter

Method

  • Place chocolate in a mixing bowl

  • Over medium heat bring cream up to a simmer

  • Add Kahlua and espresso, stir

  • Pour over chocolate and let sit for a couple of minutes

  • Stir mixture

  • Add egg yolks and stir

  • Add butter, one tbsp at a time, and stir

  • Pour into espesso cups and refrigerate for at least two hours
