Cod in Pepper Sauce
Ingredients:
700g cod fillets
1 large onion halved and sliced across the grain
1 tbsp coriander seeds
2 large red peppers
2 cloves garlic minced or mashed
2 tsp curry powder (optional)
14 oz. can of chopped tomatoes
2 tbsp honey
4 tbsp sherry vinegar or cider vinegar
2 bay leaves
Method:
Preheat oven to 300 F, line a pan with foil and oil the pan
Season fillets with salt and pepper and lay on foil
Place a pan of boiling water in oven and bake fish for 10 - 15 minutes
Saute onion with coriander seeds
Add peppers and some salt
Stir in garlic and curry powder
Add tomatoes and bay leaves and cook, stirring often, until reduced (about ten minutes)
Stir in honey and vinegar and salt & pepper to taste
Simmer another 5 minutes
Remove fish from oven and place in sauce, simmer for 5 minutes
