Crustless Quiche (Frittata)

Ingredients:

  • 1 onion, chopped finely

  • 1 red pepper, chopped finely

  • 300g frozen chopped spinach

  • 5 eggs

  • 400g chopped Monterey Jack cheese

  • 75g cream (36 % fat)

  • 1/4 tsp nutmeg

  • salt, pepper

Method:

  1. Preheat oven to 350 F

  2. Fry onion, add red pepper and continue to fry

  3. Add spinach and reduce the liquid

  4. Beat the eggs in a bowl and add cream.

  5. Add cheese and mix

  6. Add spinach, onion, red pepper and seasonings

  7. Spoon mixture into buttered pie plate

  8. Cook at 350 F for about 45 minutes (check and rotate at about 30 minutes)
