1 head cauliflower, roasted
6 large eggs
6 tbsp olive oil (90 ml)
1.25 cups almond flour (125 g)
30g psyllium husks
1 tbsp baking powder (12 g)
salt, pepper (about 1/4 teaspoon each)
a few cloves of garlic (optional)
other herbs like rosemary, thyme (optional)
Preheat your oven to 350 F.
In a blender puree the cauliflower, eggs, olive oil and garlic (if adding).
One bowl: Mix almond flour, psyllium husk, salt, pepper and baking powder.
Add moist ingredients to dry and mix well.
Spoon mixture into loaf pan. Pan should be greased, or lined with parchment, or both, especially if you want the loaf to come out without any sticking.
Cook at 350 F for about 40 minutes.
Instead of baking a loaf you can spoon mixture into muffin cups, too.
