• 200g dry chick peas (garbanzo beans)

  • 60g tahini (sesame paste)

  • 1 lemon (juice only)

  • 25g garlic, crushed or minced

  • 10g salt

  • a little fresh ground pepper, to taste

  • 110g extra virgin olive oil

  • warm water, as needed, to thin the paste


  1. soak the chick peas in a pot of water overnight, stirring occasionally

  2. drain and refill the pot and bring to a boil

  3. simmer for two hours

  4. drain

  5. put oil, lemon, garlic, tahini, salt & pepper in blender with a few of the chick peas

  6. blend until a well mixed paste is formed and add the rest of the chick peas

  7. add a little water, as needed, to thin the paste enough to blend
