Savoury muffins

Ingredients:

  • 60 g coconut flour

  • 60 g almond flour

  • 5g salt

  • 7g baking powder

  • 15g psyllium husk

  • 1/4 tsp each of garlic powder, thyme, oregano

  • 60g grated cheddar

  • 90 g butter, melted

  • 2 eggs

  • 60 g cream

  • 60 g milk

Method:

  1. Preheat your oven to 375 F.

  2. One bowl: beat eggs, add cream, milk and melted butter

  3. One bowl: mix all dry ingredients

  4. Add moist ingredients to dry

  5. Spoon into eight muffin cups. Batter is quite dry.

  6. Bake for 22 minutes.

Good with chili or stew, as an alternative to bread.
