Cauliflower bread


  • 1 head of cauliflower, chopped
  • 6 large eggs
  • 90g olive oil
  • 100g coconut flour
  • 100g almond flour
  • 1 teaspoon sea salt
  • 1 teaspoon baking powder
  • 30g psyllium husks


  1. Preheat your oven to 350 F.
  2. Bake cauliflower (or use an air fryer) to lightly brown it and remove some of the moisture
  3. Put cooked cauliflower in blender or food processor to 'rice' it. A bit rough is OK.
  4. In one bowl beat eggs, add oil and mix well, then add riced cauliflower and mix
  5. In another bowl mix flours, psyllium, salt and baking powder.
  6. Add the liquid ingredients to the dry ingredients a bit at a time and mix.
  7. Grease a loaf pan with butter or coconut oil and pour the batter in.
  8. Bake for 40 minutes.

Variation: Add grated parmesan, or herbs and seasonings.
