Crustless Quiche

Ingredients:

  • 1 onion

  • 300g frozen spinach

  • 5 eggs

  • 3 cups sliced Monterey Jack cheese

  • 1/4 tsp nutmeg

  • salt, pepper

Method:

  1. Preheat your oven to 350 F.

  2. Fry spinach and onion.

  3. Beat the eggs in a bowl.

  4. Add spinach/onion mix, cheese and seasonings.

  5. Spoon mixture into buttered pie pan.

  6. Cook at 350 F for about 45 minutes (check sooner)
