Stuffing (dressing) for Turkey

Ingredients:

  • 6 tablespoons of butter
  • 2 large onions, diced
  • 8 stalks of celery, diced
  • 2 cups mushrooms, chopped
  • 5 large fresh sage leaves, chopped, or 1 tablespoon of crushed dried sage
  • 3 cups chicken stock
  • 1 loaf of stale white bread, or bread crumbs
  • 2 teaspoons freshly ground pepper
  • 1 teaspoon salt
  • 1 bunch parsley, chopped
  • 1 cup pecans, toasted and chopped
  • 1 cup dried cherries

Method:

  1. Melt butter in a large skillet. Add onions, celery and mushrooms, and cook over medium heat until onions are translucent.
  2. Add sage, stir to combine, and cook another 3 or 4 minutes.
  3. Add 1/2 cup stock and stir well. Cook for another 5 minutes.
  4. Add onion mixture to bread in a large bowl.
  5. Add all other remaining ingredients and stir well.
  6. Add additional stock if the dressing seems too dry.
I prefer not to cook my turkey with the stuffing, but you could use this to stuff a turkey. This makes enough stuffing for about six to eight people, but you could easily double the recipe.
