Raisin bread

Ingredients:

  • 4 large eggs
  • 150g milk
  • 50g cream
  • 1 can coconut milk (14-ounce)
  • 50g butter, melted
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking powder
  • 50g coconut flour
  • 100g almond flour
  • 25g psyllium husks
  • 100g raisins
  • 75g pecans

Method:

  1. Preheat oven to 350 F.
  2. One bowl: mix eggs, add milk, cream and coconut milk
  3. One bowl: mix dry ingredients
  4. Mix ingredients from both bowls together.
  5. Melt butter and add to batter.
  6. Grease a loaf pan with butter or coconut oil and pour the batter in.
  7. Bake for 40 minutes.

Serving suggestion: Melt some chocolate on a slice, or just serve with butter.
