Cauliflower cheese buns

  • 100g bacon (optional)
  • 500g cauliflower
  • 140g grated mozzarella (or other cheese)
  • 40g coconut flour
  • 40g almond flour
  • 1 tsp baking powder
  • 2 tsp sea salt
  • 65g butter, melted
  1. Preheat oven to 375 F
  2. Prepare 2 large baking trays with baking paper
  3. Rice the cauliflower in food processor or by hand
  4. Mix all ingredients in a large bowl
  5. Put mix in burger patty size balls on paper
  6. Cook for 20 minutes, flipping after 10 minutes until golden and a little crispy
Alternatively you can make muffins with the batter, but it tends to stick to the muffin papers.
